Built on a polenta sponge for a tender, rustic crumb that's nothing like your usual celebration cake, finished with hand-piped florals on a soft off white base. Made with real mango purée, dried mango, and passionfruit purée. Warm enough for Mother's Day, good enough for any day.
Vanilla Mirror Glaze Entremet (1KG ±)
Some things don't need to be loud to be impressive. The most refined thing we've made at Elevete this Mother's Day, a glossy mirror glaze finish over six layers of Fleur de Vanille. Light and airy in some layers, rich and set in others, with white chocolate carrying the vanilla through and feuilletine adding a thin crisp contrast.
